Alix’s Pea Soup & Miss Regenerate’s Choc Truffle Snowballs

Wicked Witch of the West Pea Soup

(because of the color being the same as her face!)
A nice change from the traditional heavy and savory pea soup, this is much more refreshing. And after a day of sales shopping, who really wants to cook dinner?! Make this, it’s easier and just as tasty!

Ingredients:

  • 1 small onion, finely chopped
  • 1 medium carrot, thinly sliced
  • 1 3/4 cups reduced-sodium chicken broth
  • 2 cups water
  • 1 pound frozen peas (3 3/4 cups)
  • 1/4 cup store-bought basil pesto plus additional for serving

Method:

  1. Simmer onion, and carrot in broth and water with 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium saucepan, covered, until tender, about 6 minutes.
  2. Add peas and simmer, uncovered, until bright green and tender, about 3 minutes.
  3. Stir in pesto.
  4. Then purée soup in 2 batches in a blender until smooth (use caution when blending hot liquids).
  5. Season with salt. Add parmesan cheese if you’re feeling up to it!

Chocolate Truffle Snowballs

…super easy and a great way to use up all the chocolate from your selection boxes :)

  1. Melt milk chocolate in a bowl placed in a pan of water.
  2. Mix melted milk chocolate + museli together.
  3. Roll into balls.
  4. Roll balls in icing sugar, cocoa powder or coconut
  5. Then place in fridge until hardened.

  1. Love it – two [recipes] for the price of one!!! Truffles first me thinks and soup when it’s not so hot that we actually feel like we are melting wicked witch style ….

    • Ugh, so true. We’re melting here in Sydney too, though the rain earlier in the week was nice. I was actually wondering how this soup might turn out chilled?? Any thoughts Miss Fluff…

      • I’ve been thinking … I believe that better chefs than me have made a similar soup chilled, so may well be AOK … if Nigella can do it with borscht, I’m pretty sure we can do it with pea soup! Dollop of sour cream and it’ll be apples jack!! aPPLe
